Spanish culinary traditions: Techniques for pan con tomate and paella
Culinary traditions and techniques remain central to regional identity in Spain. In Catalonia, chefs emphasize the specific methods required to prepare ‘pan con tomate’ (bread with tomato). Michelin-starred chef Jordi Cruz suggests that the quality of the dish improves by using the crust side of the bread to scrape the tomato pulp more effectively. Other experts, including Jordi Vilà and Dani Roca, highlight the importance of using sourdough or rustic bread, ripe tomatoes, high-quality extra virgin olive oil, and flaky salt to achieve the ideal texture and flavor.
Similarly, the debate over the authenticity of paella continues. While many varieties exist, traditionalists maintain that a true Valencian paella must include specific ingredients such as chicken, rabbit, garrofó, and flat green beans, and should never contain onion. The cultural importance of these dishes was recently highlighted during a successful second edition of a rice dish competition held at the Clot de sa Grava park.
