Sustainable food waste practices focus on safety and composting

Efforts to reduce food waste through creative cooking and home composting are gaining traction, though they require specific hygiene and management practices.

In anti-waste cooking, utilizing vegetable peels increases the risk of consuming pathogens. Because peels are more exposed to surface contaminants than the flesh, boiling is recommended as a method to inactivate microbes. The World Health Organization notes that raw vegetables can transmit infectious agents if washing is insufficient, while the European Food Safety Authority highlights risks from bacteria such as Escherichia coli and Salmonella.

For household waste management, vermicomposting offers a way to transform kitchen scraps and autumn leaves into nutrient-rich compost. Using a worm composter under the sink allows for the efficient recycling of nitrogen-rich materials like vegetable peels and coffee grounds, which can be balanced with carbon-rich dried leaves to maintain a stable composting environment.
