Tomato and cucumber storage and preservation guidelines

Proper preservation and storage techniques are essential for maintaining the quality and safety of tomatoes and cucumbers at the end of summer.

For canning tomatoes, technical guidelines emphasize the necessity of acidification to ensure safety. For pint-sized jars, it is recommended to add one tablespoon of bottled lemon juice or a quarter teaspoon of citric acid; for quart-sized jars, use two tablespoons of lemon juice or half a teaspoon of citric acid. While vinegar can be used, it may alter the flavor. Additionally, using new lids for every batch is critical for safety, and processing times must be adjusted based on jar size, product type, and altitude.

Regarding fresh storage, tomatoes and cucumbers have different requirements. Experts from the UC Davis Postharvest Research and Extension Center suggest that tomatoes should be kept at room temperature (ideally around 20°C) to preserve flavor and texture, as refrigeration can negatively impact their aroma and ripening process. In contrast, cucumbers prefer a cool, humid environment. It is advised not to store these two vegetables together to prevent spoilage.
