Tomatoes keep best at room temperature in a cool, airy, and shaded spot, away from other fruits and vegetables that emit ethylene. They should not be placed in the refrigerator, as cold temperatures can make the flesh mealy and mute flavour‑developing enzymes. When humidity is high, avoid washing the fruit before storage because surface moisture encourages mould. For ripe tomatoes during a heat wave, a short stay in the fridge can extend freshness, but they should be returned to room temperature a few hours before use to restore taste. Unripe or green tomatoes must stay out of the fridge to allow natural ripening; a warm windowsill or greenhouse can accelerate this process. These practices apply regardless of the tomato’s origin, whether home‑grown or purchased, and help maintain quality for up to two weeks under optimal conditions.
