Overview
Ethylene accelerates ripening of climacteric fruits, so storage should limit exposure to emitters such as apples, pears, avocados and bananas. Gardeners may extend the season by wrapping slightly under‑ripe tomatoes in newspaper and keeping them in a dark, cool cellar (10‑12 °C) away from ethylene sources. Recent Polish food guides echo these points, advising against refrigerating ripe tomatoes, cucumbers, bananas, lemons, eggplants and sweet potatoes, and recommending storage at 18‑22 °C in breathable containers. A separate advisory also warns that several vegetables and tubers—potatoes, onions, bell peppers, garlic and cucumbers—lose quality or become unsafe when refrigerated, and should remain at cool, dry room temperature. When chilling is unavoidable, items should be returned to ambient temperature before consumption to preserve flavor, texture and safety.
