Tomatoes: Banana trick speeds ripening and storage tips keep them fresh

Gardeners can accelerate tomato ripening by placing a ripe banana near the plant. As the banana decomposes it releases ethylene, a natural gas that speeds the color change and softening of the fruit. The banana can be covered with straw or mulch to deter insects. Similar results are achieved with a slice of apple placed in a paper bag over the tomatoes.

For storage, whole tomatoes are best kept on the kitchen counter at room temperature, while cut tomatoes should be refrigerated. Keeping the stem end down reduces moisture loss; studies show tomatoes stored this way lose only 1‑2 % weight over three days compared with 7 % when stored stem‑up. Experts quoted the advice: “Once harvested, its aroma is mostly defined,” said food‑science researcher Alexandra Kazaks. “The storage method is not crucial as long as the room temperature is 22 °C or lower,” added Derek Azevedo.

These simple techniques help gardeners obtain earlier, redder fruit and preserve flavor throughout the season.
