Toyama businesses launch new seasonal culinary experiences
In Toyama Prefecture, local businesses are introducing unique culinary and cultural experiences. Maison de Vert, a newly opened pastry shop in Takaoka, is offering a rare dessert course designed to evoke the transition from autumn to winter. Led by award-winning pastry chef Yudai Fujii, the six-course menu allows guests to select from five types of coffee beans to complement seasonal flavors, such as Muscat salad and fondant chocolat.
Additionally, the long-standing rice cracker manufacturer Hinodeya Seika Sangyo is collaborating with professional side-job talent from the Tokyo metropolitan area. Through a project with Beehive Japan, the company is testing three new types of rice flour dorayaki at its Sasara-ya retail locations during its autumn factory festival. These products, which include variations featuring Beni Haruka sweet potato and black beans, are being test-marketed to gather consumer feedback for potential official release in 2027.
