Cous Cous Fest culinary diplomacy initiative

Overview

The 29th edition of the Cous Cous Fest, held in San Vito Lo Capo, Sicily, features a symbolic new entry in its World Cous Cous Championship. A team titled ‘Cous Cous Fest United’ has been formed to promote peace and cultural integration under the slogan ‘Make cous cous not war’.

This team consists of Palestinian chef Shady Hasbun and Israeli chef Tze’ela Rubinstein. Hasbun, who is representing Arezzo in his seventh appearance at the competition, will compete alongside Rubinstein to present a recipe titled ‘Il gusto dell’altro’ (The taste of the other). The dish, intended to harmonize Tuscan and Middle Eastern flavors, includes a watermelon couscous salad and a fried couscous meatball.

They join seven other competing teams representing Algeria, Brazil, France, Italy, Morocco, Senegal, and Spain.
