Research indicates that tomato consumption provides various health benefits, particularly through the antioxidant lycopene. Initial findings highlight that lycopene, which is most efficiently absorbed when tomatoes are cooked with fat, can support cardiovascular health by reducing oxidative stress and may be linked to a lower risk of prostate cancer.
Subsequent studies have expanded on these benefits, suggesting that daily consumption of raw tomatoes and tomato sauce may help reduce liver fat in individuals with non-alcoholic fatty liver disease. A study published in the journal Nutrients involving 79 adults found that participants consuming 200 grams of raw tomatoes and 50 grams of tomato sauce daily for six weeks experienced a significantly greater reduction in liver fat compared to a control group. Dr. Nadege Gunn of Iterative Health noted that this reduction occurred without significant changes to overall body weight or composition.
Recent findings also suggest these benefits may apply to metabolic dysfunction-associated steatotic liver disease (MASLD). Furthermore, research from Tufts University published in Molecular Nutrition & Food Science suggests that the protective effects may involve phytoene, a colorless precursor to lycopene. Animal studies indicated that mice fed phytoene developed substantially less fatty liver disease than those on an unhealthy diet without the compound.
Newer research reinforces the cardiovascular advantages of lycopene. Studies, including one from Harvard University involving nearly 40,000 women, link higher plasma concentrations of lycopene to a lower risk of cardiovascular disease. A 2019 review found that high tomato consumption or elevated lycopene levels were associated with a ‘26% lower risk of stroke, a 14% lower risk of cardiovascular disease, and a 37% lower risk of general mortality.’ Additional benefits include improved endothelial function, reduced LDL cholesterol, and lower systolic blood pressure.
