Italian restaurant industry economic trends

Overview

During the Aigrim Day 2026 forum in Milan, industry data highlighted the significant economic scale of Italy’s restaurant sector. Agriculture Minister Francesco Lollobrigida reported that total consumption in the sector exceeds €100 billion, with an added value of €59.3 billion. Within this, organized catering accounts for approximately €10 billion.

While the chain restaurant market specifically has reached a value of 9 billion euros, the industry faces structural challenges. Despite being a major entry point for the labor market—with approximately 40% of the workforce under age 30—the sector struggles with labor retention. Industry leaders noted a difficulty in reconciling continuous operational requirements with younger workers’ demands for work-life balance and sustainable schedules.

Consumer trends also indicate shifting priorities, with 78% of Italians expecting healthier food offerings and 83% expressing concern regarding food waste. Additionally, rising prices are impacting dining habits, leading to an increased reliance on meal vouchers.
