Italy restaurant water safety inspections

Overview

A national inspection campaign conducted in July by the Carabinieri NAS and the Ministry of Health revealed widespread irregularities in how Italian bars and restaurants treat and serve water. The investigation focused on “treated water,” which includes tap water that establishments filter, microfilter, soften, refrigerate, or carbonate before serving.

Out of 272 inspections, authorities found that 147 establishments—approximately 54%—were non-compliant with safety and administrative standards. A total of 256 violations were identified, including one criminal offense for the sale of food with false markings and 255 administrative sanctions totaling approximately 175,000 euros.

Infractions involved improper labeling of non-packaged products, hygienic-structural deficiencies, and procedural or authorization failures. Enforcement actions included the seizure of 2,000 liters of unfiltered drinking water and seven pieces of non-compliant equipment. Additionally, 10 businesses were ordered to suspend operations due to serious regulatory or hygienic issues, representing a commercial value of roughly 4.7 million euros.
