While butter provides micronutrients like potassium, calcium, phosphorus, and vitamins A, D, E, and K, it is high in saturated fatty acids. The DGE recommends limiting these to ten percent of total energy intake to reduce cardiovascular risks.
Market trends show intense price competition between discounters such as Lidl and Aldi, which has driven the price of private-label 250-gram butter packs down to approximately 1.05 euros. However, consumer advocates suggest retailers may use butter as a loss leader to attract customers.
Quality testing by Stiftung Warentest has shown that price does not always correlate with quality; private labels often perform well, while expensive brands may only achieve mid-range results. Specific German standards exist for classifications: ‘Deutsche Markenbutter’ must score at least four out of five points in testing, while ‘Deutsche Molkereibutter’ requires at least three. Other varieties include ‘Landbutter’, produced on farms, as well as ‘Dreiviertelfettbutter’ (60–62 percent milk fat) and ‘Halbfettbutter’ (39–41 percent milk fat).
