Puratos has released research detailing evolving consumer preferences within the bakery, pastry, and chocolate sectors across different regions.

In South America, the ‘Taste Tomorrow 2026’ report highlights a growing demand for products that balance personal gratification with health and sustainability. Findings indicate that 82% of consumers prioritize gut health and 69% actively purchase plant-based foods. While 86% of respondents prefer classic recipes, there is significant interest in exotic flavors and unusual ingredient combinations.

In Italy, the ‘Taste Tomorrow On Tour’ initiative revealed distinct regional preferences. Research shows that 81% of Italian consumers prefer healthier bakery products, a higher percentage than the European (53%) and global (58%) averages. Additionally, 68% of Italians are interested in exploring new flavor combinations. The Italian market also shows a strong connection to tradition, with 54% noting that fermentation enhances taste, and a consumption pattern that shifts from practicality during the week to pleasure and sharing on weekends.
