The sumac harvest has commenced in the Turkish regions of Kahramanmaraş and Elazığ. In Kahramanmaraş, traditional processing methods are used to produce ‘ekşi ahıdı’, a concentrated sour sauce. Prices for unground sumac in this region range between 200 and 300 TL per kilogram, while the concentrated sauce can reach approximately 2,000 TL per kilogram. In Elazığ’s Palu district, the spice is increasingly used as a preferred alternative to citric acid, with market prices reported at 350 TL per kilogram.
By late August, reports from Batman indicate that sumac prices are expected to decrease due to high yields. Local merchant Vasfi Gültekin noted that abundant rainfall has positively impacted production compared to the previous year. While current stock is priced around 450 lira per kilogram, the anticipated plentiful harvest is expected to drive prices down to 350 lira or lower.
