Tofu ranked highest in protein study
Overview
A study published in Frontiers in Sustainable Food Systems has identified tofu as the premier overall protein source. Developed by Dr. Chris Macdonald of the University of Cambridge and the Better Protein Institute, the Better Protein Index (BPI) evaluates protein sources using a dual-scoring system.
The index utilizes a ‘Planet Score’ to measure environmental impacts—such as greenhouse gas emissions, land use, and water pollution—and a ‘People Score’ to assess nutritional and economic factors, including sodium, saturated fat, cholesterol, protein completeness, affordability, and availability.
Tofu ranked first with 36 out of 40 possible points, followed by chia seeds, beans, and quinoa. In contrast, animal-based proteins such as mozzarella, lamb, beef, and cheddar cheese occupied the lowest positions in the rankings.
