Traditional molasses production in Turkey

Overview

Traditional molasses production continues across various Turkish regions, serving as both a seasonal activity and an economic driver. In the Akseki district of Antalya, the autumn production of andiz (pine cone) molasses has commenced. This labor-intensive process involves collecting cones from the Toros Mountains, crushing them, and boiling the liquid for approximately 18 hours to achieve the correct consistency.

In other parts of the country, such as Giresun and Amasya, molasses production is being utilized to support local economies and community empowerment. In Yavuzkemal, a municipal project allows women to produce organic molasses from apples, pears, and grapes, which is seeing high demand both domestically and internationally. In Amasya’s Yukarı Baraklı village, communal efforts involve using specific clay-rich soil to balance the acidity of grape juice during the production process.
