Turkish women preserving traditional yufka making
Overview
In various regions of Turkey, women are utilizing the ‘imece’ system—a method of collective labor—to maintain the traditional practice of making yufka (flatbread).
In Manisa, a group of women aged 60 to 80 gather to prepare dough and cook thin sheets over wood fires for Ramadan consumption. Participants expressed concern that changing lifestyles and the demands of younger generations may lead to the disappearance of this cultural practice.
Similarly, in Kayseri, women gather at dawn to prepare winter yufka. This process involves kneading dough to rest overnight before rolling it into thin sheets and cooking it on wood-heated tandoors. To ensure an organic product, the bread is made using wheat harvested from local fields and flour from local mills.
