Vienna is experiencing shifts in its nightlife and culinary sectors through venue relocations and new concept launches. The ‘Sanatorium’ concept, inspired by historical clinics and pharmacies, is scheduled to open officially opened in the city center on September 3 at Postgasse 2 in the first district. Operated by bartenders Jakob and Albert Trummer, the venue will combine utilizes a cocktail bar, gastronomy, clinical aesthetic inspired by Otto Wagner’s Jugendstil, employing elements such as liquid nitrogen, surgical trays, and art. syringes for drink presentation. The establishment exports a pharmaceutical-inspired mixology concept originally successful in New York. The project includes the relocation of Martin Ho’s ‘X Club’ to the basement after 15 years at its previous site in Wollzeile. The ‘Sanatorium’ location is also expected to host a sushi bar from and incorporates the ‘Ay-Vy’ concept. However, the involvement of Martin Ho sushi concept, which has raised questions regarding the impact of his previous business insolvency on this new venture. also expanded to Hanoi, Vietnam. The kitchen at Sanatorium is led by Japanese chef Yuki Sakamoto. The gastronomic landscape is also expanding, with the opening of the ‘Wiener Würstel Pavillon’ at Hietzinger Tor near Schönbrunn Palace. Launched by Patricia Pölzl, the stand occupies a former mobile gas station pavilion and offers sausages sourced from the Ferdinand Wild butchery.
