Research presented at the American Society for Nutrition's NUTRITION 2026 meeting suggests that genetic makeup influences how individuals respond to low-carbohydrate diets regarding LDL cholesterol levels. Using data from the DIETFITS randomized controlled trial, researchers investigated why dietary responses vary significantly between people.
The findings indicate that saturated fat, a common component of low-carb diets, may interact with a person's genetic background to drive higher cholesterol levels. While some individuals see little to no change, others may experience a sharp rise in LDL cholesterol, potentially increasing the risk of heart disease, heart attack, and stroke.
Lead author Alexa Barad, PhD, RDN, noted that dietary advice is not “one-size fits all,” highlighting that genetic sensitivity to saturated fat plays a critical role in determining how these dietary patterns affect heart disease risk factors.
