Mexican pozole culinary traditions and ingredient costs

Overview

Discussions regarding traditional Mexican pozole have focused on both culinary preparation and the economic cost of ingredients. Regional variations exist, such as the red pozole in Veracruz which utilizes a guajillo chili-based sauce.

Mexico’s Federal Consumer Protection Agency (Profeco) has monitored the costs of essential components for the dish, particularly in anticipation of Independence Day celebrations. Through its ‘Quién es Quién en los Precios’ program, Profeco estimated that preparing a traditional pozole for seven people costs approximately 540 pesos. Protein remains the largest budget component, with pork prices ranging from 120 to 280 pesos per kilo and chicken monitored between 32 and 59 pesos per kilo. For corn (maíz cacahuazintle), prices have been recorded between 47.90 pesos in Mexico City and 61.50 pesos in Tamaulipas.

To assist consumers, Profeco head Iván Escalante released a budget-friendly recipe for white pozole designed to serve six people for an estimated 292 pesos. Escalante noted recent market fluctuations, reporting that onion prices have increased by 32.70 percent and lemons by 11.17 percent. Conversely, potato prices have decreased by 10.66 percent, alongside a reduction in chicken costs.
