Nutritional benefits and selection of whole-grain bread
Overview
Nutritionists and dieticians are highlighting the role of whole-grain bread in healthy diets, challenging the notion that bread must be eliminated for weight loss.
Experts note that weight management depends on overall caloric balance rather than the removal of specific food items. Dietician Adrienn Szabó from Semmelweis University clarifies that the belief that bread is inherently unhealthy or causes weight gain is a misconception. While many avoid bread due to its carbohydrate content, carbohydrates are essential energy sources, with international recommendations suggesting they should comprise 40–60 percent of daily energy needs. In Hungary, Szabó notes that excessive fat consumption is a more prevalent issue than excessive carbohydrate intake.
Dieticians distinguish between refined white bread, which has a high glycemic index that can cause insulin spikes, and whole-grain varieties. Whole grains are rich in fiber, plant protein, and complex carbohydrates, which help stabilize glucose absorption and regulate appetite hormones like GLP-1. High-quality whole-grain bread provides essential micronutrients, including B vitamins, magnesium, iron, zinc, and selenium, as well as bioactive plant compounds like phenols and phytosterols.
Consuming whole grain products may help reduce the risk of metabolic syndrome, high blood pressure, type 2 diabetes, cardiovascular diseases, and colorectal cancer. To ensure quality, experts suggest checking ingredient lists, noting that local regulations consider a product whole grain if it contains at least 60 percent whole grain flour. Consumers are advised to look for products containing at least three grams of fiber per slice and less than three grams of added sugar per slice.
