Ioanna Touni business launch and expansion in Paris

Overview

Greek influencer Ioanna Touni has launched a new business venture, Fat Rat Croissanterie, in the Montmartre district of Paris. Established in partnership with her cousin, Konstantina Panagou—a chef who has resided in Paris for five years—the shop was created to meet Touni’s personal preference for pastries with heavier chocolate fillings than traditional French offerings. The project was approximately eighteen months in the making and was designed in collaboration with Stefano Mendenzi.

Touni noted that while her priorities have shifted, her changed financial situation and personal life over the last two years enabled this international investment. She admitted the venture has involved “significant stress and sleepless nights” due to its complexities, but has since described the shop as a “dream turned into reality.”

Following the shop's opening on September 9, Touni visited the establishment with her son, Paris. While the shop has received positive public feedback, Touni recently announced a temporary closure lasting two to three days. This pause is intended for upgrades and the installation of additional kitchen equipment, a move prompted by the business performing “exceptionally well” and products frequently selling out. Following this brief hiatus, the shop has officially reopened to the public, with the business stating the updates were intended to ‘raise the bar’.

Recently, Greek presenter Dimitris Ungarezos visited the bakery for the television show ‘To Proino’, awarding the establishment an 8 out of 10 rating. He highlighted the pistachio croissant as a favorite and noted a variety of sweet and savory options, with prices ranging from 3 euros for a plain croissant to approximately 9 euros for specialty items. Ungarezos confirmed he paid for his order in full, remarking, “Why should they give them to us for free? We didn't provide a service; everyone was just filming videos. How will the girl make a living?”
